Tom is a founding member of the Gales team, joining us just prior to our 2022 launch. In 2026 he was promoted to Head Brewer, sending Gales on a slightly more experimental tangent, without forsaking our popular staples (with 13 taps to fill, there’s plenty of room to experiment).
The mead is Tom’s work, with new flavours coming through with each brew. Customers who’ve never tried a mead have been enthusiastic about the style, with some firm converts in our regular cohort.
Tom’s also introducing sours to our lineup, and is always looking for – or growing – interesting new hops. You’ll generally find him behind the bar on a Sunday if you’d like to yap about beer.
Tom’s training as a chef – a profession he left to come to Gales – was a great foundation for building his skills as a brewer. With ambitions to become a qualified Cicerone, Tom is currently studying the art, and listens to a multitude of beer podcasts to advance his knowledge.
Will came to Gales in 2026 as Bar and Venue Manager. Like Tom, he ignited his career in kitchens, but before long got itchy to swap out the thankless toil of culinary confinement for the glorious life in Front of House, among the people – and windows. “I love that the ever expanding population of Brunswick East still has a strong community spirit”, he says, and in the mould of the classic barkeep, is always ready to engage on any topic – except politics or wine.
Originally from the UK, Will has worked in hospo all around the world, refining his beer tastes in a Belgian beer palace and the manual pumping stations of Ol’ Blighty, and smiles more broadly when there’s an ESB on tap.
Whether you’re considering an afternoon beer with your usual cohort, a folksy wedding for 100, maybe a book launch or a big birthday bash, Will’s your man. And you can catch him on the bar most shifts.
Gale’s co-founder Dave built the brewery on little more than (extensive) home brewing experience, and quickly won medals for his Stout and Porter. Once Tom’s mentor, they now work shoulder to shoulder in the brewing process.
As an engineer, Dave knows all about precision. When it comes to processes and procedures, it’s everything by the book, measured and calculated. Nothing left to chance. And nobody understands their system like Dave does – he built the entire system himself, using quality componentry plus a few clever devices he designed himself. He’s good at what he does, and loves to talk beer.
You won’t find Dave behind the bar these days. Semi retired in 2026, when he’s not brewing with Tom, he’s traversing the country on a never ending brewery tour, returning with stories, samples and knowledge to inform Gales’ new brews.
